it is frustrating that the 16GB models are never discounted. You can easily add external storage, but you are stuck with the RAM. I guess they know this too well.

I've buying from the Apple refurb store since 2009. Stock can be hit and miss sometimes, but you get a good discount, a full warranty, and the option for AppleCare. I currently have a 2018 MacBook Pro, and an M1 Mini, from there. https://www.apple.com/shop/refurbished/mac/macbook-air-macbook-pro-16gb

Apple's refurbs are great and are as good as new. However there is some drawbacks. They go in/out of stock quickly and will sometimes have long gaps where they have no availability.. You can't use your points/rewards that some retailers have that you may want to use. Also if you are like me and have a credit card that doubles warranties for free, "refurbs" are excluded.

Still only the awful 8GB version. You're better off getting an 8GB model, with AppleCare, off eBay than to get one of these. There's a lot of people that regret the 8GB model, sell them on eBay, then get the 16GB.
